Step 1: You will need

  • 240 g cream cheese
  • 80 g smoked salmon, chopped
  • 2 tbsp heavy cream
  • white pepper
  • 2 cucumbers
  • 1 tbsp caviar
  • a few springs of dill, for garnish
  • 1 cutting board
  • 1 knife
  • 1 melon bowler or ball maker
  • 1 piping bag
  • 1 blender
  • 1 spoon
  • 1 peeler

Step 2: Make the salmon mousse

Introduce into the mixing bowl of the blender, the chopped salmon, then add the cream and season with white pepper. Put the blender lid on and blend until it becomes a fine purée. Spoon in all of the cream cheese, put the lid back on and blend until you have achieved a smooth paste.

This can be made a day or two before hand. Also you can add a little lemon or lime juice at this point whilst blending.

Step 3: Place in piping bag

Spoon the blended smoked salmon into the piping bag, then close the cuff and set the bag aside.

Step 4: Peel and cut the cucumber

Holding the cucumber upright and with your vegetable peeler, slice the skin off horizontally. Then, turn the cucumber and miss the next centimetre or so and then peel off some more skin and continue making this striped pattern. Now, use your large knife to cut it into large chunks. With your melon ball maker, scoop out the centre of the cucumber and discard the flesh. Repeat until all the cucumbers have been scooped.

Step 5: Fill the cucumber cups

Pipe the smoked salmon mousse into each of the cucumber cups and spoon on a little bit of caviar over the top for a fantastic colour combination!. Finish by placing a small spring of dill on the top and your canapé is now ready to present!

Step 6: Present the canapés

We have just given you one idea of how to fill the cucumber cups but you can be more imaginative. For example, crab salad would go beautifully as would gazpacho. Enjoy your smoked salmon mousse canapes!
