How To Make Sole Meuniere

Step 1: You will need
- 25 g plain flour
- 1 x 400 g sole
- 2 tbsp oil
- 50 g butter
- 2 tsp lemon juice
- 1 tbsp chopped parsley
- salt and pepper
- lemon to serve
- 1 frying pan
- 1 chopping board
- 1 shallow tray
- 1 sharp knife
- 1 fish slice
- 1 spoon
Step 2: Flour the fish
Generously season the flour with ½ teaspoon of salt and 10 turns of pepper. Mix it all together.
Place the fish in the flour and coat each side with it. Carefully tap off any excess flour.
Step 3: Cook the fish
Place the frying pan on a high heat and add the oil. Sprinkle a little bit of flour in the oil. If it sizzles you know it is now hot enough.
Add a knob of the butter and add the fish to the pan. Lower the heat and .fry over a moderate heat for 4-5 minutes until golden in colour then use the fish slice to turn over the fish and cook on the other side for 4-5 minutes.
When the fish is cooked carefully place it on your serving plate. Keep it warm in the oven.
Discard the oil from the frying pan and wipe clean with a clean cloth or paper towel.
Step 4: Make the butter sauce
Place the pan on the stove and add the remaining butter and allow it to melt on a moderate heat. When the butter starts to turn slightly brown add the lemon juice, parsley and some salt and pepper to taste. Cook together for only an extra minute more.
Step 5: Serve the fish
When the sauce is finished remove it from the heat. Take the fish from the oven and cover it with the butter sauce. Perhaps serve your delicious soul meuniere with some boiled potatoes and sautéed French beans.
