How To Make Sourdough Bread

Ingredients
- wholemeal flour
- rye starter
- white flour
- white sourdough starter
- dark rye flower
- malt
- sea salt
Method
Start by mixing together your rye started, a little wholemeal flour and some water. After this has been left to sit for 2-4 hours it will be your new starter.
Once your starter is ready mix it with your water along with your white starter.
Mix your white flour with the wholemeal flour, the rye flour, the salt and the malt.
Pour your water and sourdoughs into your flour mix and combine all the ingredients. Then turn out onto a table and knead rhythmically for a few minutes.
Leave covered with a bowl for several hours to prove.
Stretch out the dough and fold over a few times, then prove again, this time on a tray lined with baking paper and covered with a tea towel.
After it has risen again, rub with a little water and make some cuts into it. Bake with a pan of water in the oven.
When the bread is ready, it will sound hollow when tapped on the bottom.
