This recipe is a joke! Putting raw chicken into cold water and bringing it to a boil makes stock! Second, no self-respecting southerner would cook the chicken beforehand, and true SOUTHERN fried chicken doesn't contain all those herbs.

We are surprised that they haven't been very sick from doing so.

Ok, my husband is a chef. (yes, a real one with a degree), and a certified dietary manager. I dont know why you think this chicken will make you sick. It wont. My 73 year old mother has made a similiar recipe. She uses the stock for dumplings. Its not a southern recipe but a good one. Just make sure to check the temperature on the chicken.

By the time the chicken has been "boiled" (and you really do mean "thoroughly cooked", it's perfectly safe to cool it down and then, at a later time, reheat it. What would be unsafe is cooking it partially, putting it in the fridge, and then frying it -- but that's not what's happening here. You are frying completely cooked chicken that had been cooled down, but by that time the evil evil bacteria are already dead.

those saying that boiling the chicken first is unsafe are totally mistaken;what could be unsafe is frying thick pieces of chicken(such as drumsticks) without first boiling, as the meat close to the bone doesn't cook thoroughly. It's different when you cook the drumsticks in a sauce because you can simmer until thoroughly cooked, but if you're gonna fry this is much safer.I'll give this recipe a try!!

I agree that this is NOT southern fried chicken! There is no boiling step--this will ruin the texture of the chicken. a real southern recipe: soak the chicken in cold water with salt for 3o minutes. The last 10 minutes add a splash of vinegar. Then pat dry the chicken and dredge in Kentucky kernel seasoned flour and fry in Corn oil at 350--400F in a deep fryer. this makes real southern style chicken

I agree with the last two posters. This is not a recipe for real southern chicken--we do not use parsley in the seasoning and if you are going to deep fry it as is shown, there is no need to parboil it before; your hot oil will be enough to cook through in the deep fry method. Boiling before frying will RUIN the texture of the chicken. The cook doing this is certainly not from the South!!

Right ive got a degree in food safety, there is absolutley no chance that this chicken can make you sick if it is cooked through when it is boiled, then refigerated, as all the bad bacteria is killed, and then refrigerated so it can not grow to dangerous levels in the 1/2 hour time it is fried again in. Are some people just plain stupid???

This is a great method and it works. If you remove the skin is less fatty and you can buy season floured you you can get the flavoured you want. Because you are only really frying the coating you spend less time over the hot oil. you can even shallow fry them. You can use an egg or two instead of buttermilk.

Boiling it first makes sense, we use a pressure frier that uses the water in the chicken to pressurise. I'd imagine that the hot steam escaping the chicken would also boil the chicken, which is what leaves it moist and not horribly oily and burnt as so much 'Authentic' southern fried chicken usually is.

I agree--many fine southern cooks are hanging their heads over this fake recipe. Please try Paula Deen or Alton Brown or Emeril on the Food network as they have more authentic versions. There is no boiling step and this seems to be made with people who CANNOT fry properly in mind as such people would end up with raw chicken as they have poor cooking skills. To real Dixie cooks frying is second nature and we do not need a "cheat" like boiling to get chicken properly cooked through. Frying chicken requires time and experience to perfect but this is easily done.

Authenticity is in the eye of the beholder. This is a simple and useful explanation of the techniques involved, and surely individuals have enough brain to adapt it to their tastes ?
As for poaching it first - massively more sensible and safer than trusting to luck that it is cooked through.

Looks good. As a southerner, I can tell ya that it's the buttermilk that makes it "southern fried chicken." Looks like southern fried chicken to me! We don't typically boil the chicken first though--just batter and fry the suckers :P

I seriously don't know why people are arguing abou the boiling of chicken. If ppl want to boil, let them be! The chicken can be cooked faster and won't absorb so much oil that way anyways. Plus it won't ooze blood aft that. Some people are are paranoid of germs and whatnot so let them be happy. Videojug should have bloody just named it fried chicken to avoid ppl saying that the recipe is not authentic southern fried chicken
