Step 1: You will need ….

  • 250 ml olive oil
  • 4 large potatoes -peeled and cut roughly into small cubes
  • 1 large onion, thinly sliced
  • 4 large eggs
  • salt and pepper
  • 1 heavy based frying pan
  • kitchen roll
  • 1 slotted spoon
  • 1 bowl
  • 1 whisk
  • 1 large plate

Step 2: Cook the ingredients

Place the frying pan on a medium heat, allow the pan to warm through for a minute and add 1/2 of the oil. To cook in two batches, add half the potatoes, moving them around to separate them then half the onions. Stirring well, allow them to soften which will take approximately 5 minutes. When the first batch has been cooked, remove them with your slotted spoon and drain on a plate, lined with some kitchen paper. Add the second batch of potatoes and onions to the pan and cook exactly as before.

Step 3: Beat the eggs

Crack the eggs on the side of a large bowl and pour them in. Season with salt and pepper and beat well.

Step 4: Add the potatoes and onion

Add the partially cooked potatoes and onions to the beaten egg mixture and ensure they are completely covered. Leave to sit for 10 minutes.

Step 5: Cook the tortilla

Place the same frying pan on a medium heat and allow it to warm through. Add the remaining oil and heat. Once heated add the egg mixture and spread it into the sides of the pan. Leave to cook for roughly 10 minutes. Remove from the heat and place it under the grill for 3-5 minutes to firm up the top. Remove after this time.

Step 6: Flip the tortilla

Place a large plate over the tortilla and with one hand on the plate to steady it, flip it over from the pan onto the plate.

Step 7: Serve

Your tortilla is ready to serve and can be enjoyed hot or cold.

    I´m spanish and I´d be glad if this page check the recipes before uploading them, because in my personal opinion it isn´t the way how to do a typical tortilla de ptatas.

    the pan is wrong for a start, you wouldn't use a heavy pan like the one in the video. the frying process would be much longer than five minutes and you can check the softness of the potato simply by using a fork. black pepper would never be used, just salt. whilst the onion is optional it gives a tortilla that 'edge' in my opinion, I always add a little chorizo too. olive oil would be used, and liberally too. finishing it off the oven is definitely a no-no. I get the impression this recipe has been 'adapted' to assuage UK/British paranoia on the 'unhealthiness' of frying. If the most important question at the end of the day is flavour, then this omlette compared to a real one will inevitably dissappoint. In short, it's crap.

    I don't care what Spanish people prefer method! My boyfriend is Spanish, he flipped the pan, which it was impossible for me as the pan is too heavy. I did exactly like this video and turned out, always, well! At the end of the day, the taste is more important. So chill out!

    This is no more a tortilla than that green thing I found half dead on the bottom of my shoe last week. I'm going to see if there are any other recipes for tortilla here, and if not, I'll upload my own.

    No me gusta! My friends from Spain have offered me tortilla before so I thought to follow this receipe just to give it a try you know... It was a mess, I really do not intend to make it again. It was just not very good.

    Sorry but as a Spaniard, and I would say quiet proud of our way of eating, this tortilla is not ours, not even in the way it looks, we cut the potatoes in very thin slices, then we fry them along with onion, cut the same way, I personally add green pepper for the taste, there are many types, and everything is fried without burning any of the ingredients, you beat the eggs, making sure you cover and mix well the ingredients and then toss it a couple of times making sure it looks nice and doesn't get burn. Hope I help.
