How To Make Spiced Cod With Lentils

Step 1: Season the cod
- 450 g cod fillets, cut into large chunks
- Salt and pepper
- 4 tbsp olive oil
- Grated zest of 1 lime
- 100 g red lentils
- 100 g green lentils
- ½ tsp ground turmeric
- 500 ml fish or chicken stock
- 1 tbsp butter
- 3 shallots, chopped
- 1 ½ tsp cumin seeds
- 1 ½ tsp coriander seeds
- 1 tbsp grated ginger
- ½ tsp cayenne pepper
- 1 tbsp lemon juice
- 2 tbsp fresh coriander, chopped
- 2 small saucepans with lids
- A pestle and mortar
- 1 low-sided saucepan with lid
- 1 wooden spoon
- 1 bowl
Step 2: Cover with oil and lime zest and marinate
Pour over the olive oil, add a sprinkling of lime zest and leave to marinate.
Step 3: Put the lentils into separate saucepans and cover with stock
Put the red lentils into a small saucepan and the green into another.
Pour ¼ of the stock over the red lentils and 3/4 over the green.
Step 4: Add the turmeric
Next, add turmeric and salt and pepper to both the saucepans and bring the stock to a boil.
Once boiling, cover the pans and leave them to simmer. Allow 15 minutes for the green lentils and 7 minutes for the red.
Step 5: Crush the cumin and coriander
Meanwhile, take the pestle and mortar and crush the cumin and the coriander seeds into a fine dust.
Step 6: Fry the shallots
About 5 minutes before checking the lentils, put the butter to heat in a low-sided saucepan and keeping the temperature low, add the chopped shallots and start to sweat them.
Step 7: Add the spices
Sprinkle in the freshly ground cumin and coriander, followed by the grated ginger and the cayenne pepper and continue frying.
Step 8: Add the lentils
Once the lentils are almost done – check that there is still a little liquid remaining – add them to the shallot-spiced mixture and stir together well. If necessary, add more water.
Step 9: Stir in the lemon juice and coriander
Pour in the lemon juice and the coriander while stirring and season with salt.
Step 10: Cook the cod
Finally, place the marinated cod on top of the spiced lentils, cover and leave to cook on a moderate heat for about 7 minutes.
Step 11: Check the fish
After 7 minutes have passed, check that the fish is cooked by pressing down on one of the chunks. If it flakes easily then it's ready.
Step 12: Serve
Spoon the cod and lentils on to a serving dish, garnish with the tomatoes and coriander and serve.

I run a charter fishing boat and have no shortage of fresh What would be a good healthy side dish for this recipe?
We used 16oz Talapia, vegetable oil to marinate, needs only 1/2 zest of lime, cut cayenne to 1/8 tsp, salt to taste at table and you have a excellent side for some Singapore noodles.
I made this dish last saturday. I used haddock instead of cod. The dish is quite hot because of the cayenne pepper and thats great for adults however not for kids. I am going to remove the cayenne pepper next time as I think the spices alone will be sufficient and will only remove the heat from the dish and not the flavour. I will let you know if there is any taste difference. A excellent meal and again very easy.
