Step : You will need

  • 1 kg chicken wings or drumsticks
  • 3 cups (750ml) buttermilk
  • 2 tbsp chili powder
  • 1 tsp Cayenne pepper
  • 400 g flour
  • 8 cups (2000ml) canola oil
  • 1 ½ cups (380ml) hot sauce
  • cooking thermometer
  • tongs

Step 1: Marvelous Marinade

In a large mixing bowl, combine 3 cups (720 ml) buttermilk, 2 Tbsp chili powder, and 1 tsp Cayenne pepper. Whisk briskly until everything is incorporated and the marinade is a nice, pink color. Salt 2 lbs (1 kg) chicken wings and drumsticks and pour the marinade on top. Mix the wings and drumsticks insuring all sides are coated with the marinade. Refrigerate for 1 to 2 hours.

Step 2: Flour Power

Place the wings and drumsticks into a bowl with 4 cups (400 g) of flour. Coat all sides thoroughly and place on baking sheet. The buttermilk and flour will add to the deep fried experience.

Step 3: Deep Fry

Heat 8 cups (2 L) of canola oil to 350F (180C) and place the chicken wings and drumsticks in the pot using tongs. Be cautious not to burn yourself or expose any of the oil to open flames. Fry up to six wings and drumsticks at a time for 3-5 minutes. Place on a paper towel when finished.

Step 4: Sauce And Serve

Place the fried wings and drumsticks in a large serving bowl and pour 1 1/2 cups (360 ml) of your favorite hot sauce over the chicken. Toss the chicken to coat and serve with Blue Cheese dressing and celery sticks. Enjoy!

    Good recipe but it's not "Buffalo". Original Buffalo wings is way more simple: Just deep fry or cook the the wings in the oven at 450 until golden and well done. In a deep bowl mix 1 part of melted margarine (NO BUTTER!) with 3 parts of Frank's Red Hot sauce. Add the wings and toss.. That's it!

    I prepared this for my girlfriend and she invaded my toilet after 10 minutes... I guess it's because it's so good it makes you wanna feel naughty on the closet! haha... I advice you NOT to try this... but on the other side... it depends on what you want to do next...

    The hot sauce is probably Frank's Red Hot sauce. Available in most all American (and Singapore) grocery stores. It is one of the original sauces from Buffalo.

    Let me get this straight... You make buffalo chicken wings by cooking some chicken then dunking it in the contents of a packet of buffalo wing hot sauce... So how do you make the hot sauce?

    BuffaloGal... You are 100% on the Money. This recipe may "work" but it's not a traditional Buffalo wing recipe. I'm from Rochester, NY. 1. WINGS 2. OIL 3. BUTTER 4. FRANK's RED HOT SAUCE COOK. DRAIN. COAT. If you want an even spicier WING I add other peppers to it. CRUSHED RED PEPPERS ETC.... Must Serve with Celery and Carrot sticks and Blue Cheese. Why some serve with RANCH I will never know... And That's it. ENJOY! Dressing.

    This is how they make wings in Buffalo. Ingredients: 4 pounds Chicken wings 4 cups Vegetable Oil 4 tablespoons butter or margarine 5 tablespoons Frank's Red Hot sauce (no other) Directions: 1. Chop off the tip of each chicken wing, and discard it. Chop the wing in half (cutting at the joint) to make 2 pieces. Also use drumsticks. 2. Heat the oil over high heat in a deep skillet, Dutch oven, or deep-fat fryer until it starts to pop and sizzle (around 400 degrees F). Add half the chicken wings and cook until they're golden and crisp, stirring or shaking occasionally. When done, remove them to drain on paper towels and cook the remaining wings. 3. Melt the butter or margarine over medium heat in a heavy saucepan, add the hot sauce. The more butter the milder the wings so if you want them hot add no butter. 4. Shake in a container wings in sauce. They should not be dripping just coated. Serve with celery and blue cheese dressing. Not ranch.
