How To Make Spicy Chicken Salad With Lime

Step 1: You will need...

  • 2 chicken breasts,
  • salt and freshly ground black pepper
  • 1/2 a cucumber
  • 1 bunch of coriander
  • 1 bunch of mint leaves
  • 1/2 tsp sesame oil
  • 2 tbsp lime juice
  • 1/2 tsp chilli, chopped
  • 1 spring onion, thinly sliced
  • 1/2 an iceberg lettuce, finely shredded
  • 4 lime wedges
  • 1 frying pan
  • 1 tea spoon
  • 1 pair of tongs
  • 1 chopping board
  • 1 sharp knife
  • 1 roasting tray
  • 1 bowl

Step 2: Preheat oven

Start by setting the oven to 200°celsius.

Step 3: Cook the chicken

Place the frying pan on a medium to high heat and add the olive oil. Add the chicken sear for two minutes or golden brown on both sides. Put the chicken into the roasting tray and cook in the oven for fifteen minutes.

Step 4: Prepare the cucumber

Slice the cucumber in half lengthways and then use the spoon to scoop out the seeds. Finally, cut the cucumber into very thin slices.

Step 5: Cut the chicken

When the chicken is cooked remove from the oven and leave to stand for twenty minutes. Place the chicken on a chopping board, cut it into thin slices and then into strips.

Step 6: Mix ingredients

Into the bowl add the chicken, cucumber, coriander and mint leaves, sesame oil, lime juice, spring onions, and chilli. Mix everything together.

Step 7: Serve

Put some iceberg lettuce into a bowl. Place the chicken salad on top and garnish with some lime wedges. Serve.
