How To Make Spicy Mexican Dip

Step 1: You will need...
- 3 red onions, chopped into small dice
- 3 red peppers, chopped into small dice
- 3 green peppers, chopped into small dice
- 300 g cheddar cheese, grated
- 12 slices of processed cheese
- 300 g cream cheese
- 3 tbsp chilpotle chilli purée salsa
- 3 tbsp vegetable oil
- 1 tbsp dried chilli flakes, use more or less, depending upon how hot you like it
- salt, to taste
- 1 medium pot
- 1 spatula
- 1 slotted spoon
- 1 oven dish
Step 2: Preheat the oven
Set the oven to 175ºC (350ºF/ gas mark 3).
Step 3: Cook the ingredients
Heat the pot over a medium heat. Add in the oil, the red peppers, green peppers, onions, Chilpotle paste, dried chillies and stir. Allow to sweat down for roughly 5 minutes. Season, stir, and remove from heat.
Step 4: Assemble the dish
Using your spatula, spread the soft cheese on the bottom of the dish. Use the slotted spoon to transfer the pepper mix as it will drain off the excess liquid.
Add a layer of pepper mix, a few of the cheese slices, another layer of the pepper mix, a few more cheese slices and finally sprinkle with the grated cheddar cheese.
Step 5: Bake
Put the dish in the preheated oven and bake for approximately 30 minutes then remove from the oven. The cheese should be golden and bubbling.
Step 6: Serve
Your dish is now ready to serve! Spoon a generous portion onto a serving plate and serve with some tortilla chips.

Looks good never in my life has my mom or any other relative has made this. Although I believe only in raw version. But looks great.
Add some ground beef and this makes a very good main dish. Be sure to use a larger pan though.
Please!!! this is not mexican at all. I am sorry but it's greasy and disgusting and not all the mexican food is greasy. Very disappointing
i've cooked this for people who didn't like cheese, and they licked the plate clean...seriously - this is a little fattening but worth every bit of it...mouth watering and unbelievable!!!
I haven't tried this, but it looks pretty good. My only reluctance is that it doesn't seem to include anything spciy. I like cheese, and peppers, but Mexican excels at being spicy so I'm thinking that when I do this, I'm going to add a few jalopenas.
