- 400 g pasta, pre-cooked
- 150 g chorizo sausage
- 150 g red onion, diced
- 1/2 tsp cayenne pepper
- 2 garlic cloves, crushed
- 400 g tinned chopped tomatoes
- 60 g mature cheddar, grated

Pre-heat your oven to 180 degrees Celsius.
Heat some olive oil in a pan, then add the onion with a little salt and pepper, and the chorizo sausage. When you use raw chorizo sausage, as opposed to the dry chorizo sausage, you need to make sure you cook it.
Add your tin of tomatoes, cayenne pepper and cook for a few minutes.
Pour your cooked pasta into a baking dish, cover with the tomato sauce and cheese, then bake for about 15 minutes.
