In a blender, combine the lime juice, jalapeno, honey and cumin, and pulse until blended.


Gradually add the extra virgin olive oil and continue blending.


To a bowl, add the corn, cucumber, and onion.


Pour the dressing over the salad and toss.


Season with salt and pepper and serve.
