How To Make Spinach And Asparagus Lasagne

Step 1: Make the asparagus sauce
- 200 g pasta sheets, (ready to cook)
- 3 asparagus, (cut into 3 equal parts - keeping the bottom third separate)
- 3 shallots, chopped
- 1 ltr double cream
- 250 g baby spinach, washed
- 1 knob of butter
- 270 g emmental cheese, grated
- 2 tbsp vegetable oil
- salt and pepper
- 1 baking tray
- 1 colander
- 1 knife
- 2 large bowls
- 1 medium pot
- 1 large pot
- 1 sieve
- 1 ladle
Step 2: Cook the asparagus
Half fill the large pot with water and bring it to a boil. Once boiling, add the top and middle sections of the asparagus and cook for 3 or 4 minutes. Drain in a colander and immediately transfer to a bowl to run cold water over them. Transfer back into the colander and allow them to drain.
Step 3: Sieve the sauce
Place the sieve over a large bowl and pour through the asparagus sauce. Keep the contents of the bowl and discard any residue that may have collected in the sieve.
Step 4: Preheat the oven
Set the temperature of the oven to 200ºC (400ºF/ gas mark 6).
Step 5: Layer the lasagne
Using a knob of butter, lightly grease the inside of the baking tray. Layer the tray with pasta sheets (breaking in half if required), spinach, asparagus (tips and mid-sections) and the sauce. Repeat the process and sprinkle grated cheese over the top.
Step 6: Bake the lasagne
Place the lasagne into the oven and cook for around 30 minutes, or until the cheese turns golden.
Step 7: Remove from the oven
After 30 minutes, remove the lasagne from the oven and allow to cool for 5 minutes before serving.
Step 8: Serve and enjoy
Cut yourself a generous slice and place on a serving plate. Add some fresh green salad and a slice or two of crusty garlic bread and enjoy your vegetarian meal.

i made it and i do advise to use more sauce before the cheese, just a thin layer though! came out perrrfectly!:D
the top layer of pasta did not turn out right, it was dried out!
i made this yesterday, the sauce was nice but the top of the pasta was very hard and had dried out, despite the cheese topping. So despite the directions should I have added another layer of the sauce before the cheese. I have never made Lasagna before.
