Step 1: You will need

  • 1 cup Basmati Rice
  • 2 Oil
  • 1/2 medium Onion, Thinly Sliced
  • 1 tsp Fennel Seeds
  • 1 Black Cardamom
  • 1" Cinnamon Stick
  • 1 Clove
  • 1 Green Cardamom
  • 1 Bay Leaf
  • 2 cups (500ml) Chopped Frozen Spinach
  • 2 Carrots, Medium, Shredded
  • 2 cups (500ml) Water

Hi, welcome to show me the curry.com, I'm Anujahitel and I'm Hitelanuja and today we're going to be making spinach and carrots pulav. In today's world we always in such a rush and scrambling for time and you cannot beat this simple and one part dish made in the microwave. Here's what you're going to need: basmati rice, 1 cup. Oil 2 table spoons. Onion, 1/2 medium thinly sliced. Fennel seeds, 1 tea spoon. Black Cardamom, 1. Cinnamon stick, 1 inch piece. Clove, 1. Green Cardamom, 1. Bay Leaf, 1. Chopped Frozen Spinach 2 cups. Carrots 2 medium shredded. Water, 2 cups. Red chilli powder, to taste. Salt, to taste.


Before we get started we've already gone ahead and washed our rice and soaked it. it needs to soak for at least half hour before we use it in this recipe. OK over here what we're going to do is we have got a micro wave safe dish and we're going to put in our oil, and you keep mixing, that way we have everything nicely mixed up. We're going to mix in our fennel seeds. Mix in all our whole garam masalas and we're going to also put in our onions at this point. I'm going to just open them up, its just easier to mix, they don't clump up and I'm going to give it a good mix and we're going to put it in the microwave uncovered for 3 minutes.

OK this is cooked for 3 minutes, we're going to give it another mix. Everybody's microwaves are different and be sure you keep an eye on your onions you don't want to over cook them, your looking for a nice transluscent onion. We're going to go ahead and add our vegetables, our carrots, and the spinach.


Give it another mix. the color combination is great and you know you actually make it with a lot of other vegetables, you can add zucchini, beans, carrots, peas, so the list is endless. We're going to put it again in the microwave for 3 more minutes, again uncovered.


OK it's out of the microwave and we're going to give it another mix. So we did use frozen spinach so you want to make sure it's you know all defrosted and kind of cooked a little bit. Now we're going to add in our rice, that is already been washed soaked and you've drained out the water, and we're going to add in our salt, and our red chilly powder which is optional. Mix really nicely. and the good proportion, water proportion to rice is 2 cups of water for 1 cup of rice. Works out wonderful even in the microwave, and we're going to add in 2 cups of water. And now it is ready to go in to the microwave for 5 minutes. Actually a total of 15 minutes, every 5 minutes I'm going to go ahead and take it out, give it a mix and make sure it's OK and from this point onwards we're going to cook it covered. So that's the very important part, because we want to cook in the water and the water to cook nice and hot so that the rice gets cooked.

OK it has been cooking for 15 minutes and I'm going to give it a final stir just make sure it's all cooked and at this point which is very important for all rice, you have to let it sit for a couple of minutes before you eat it or serve it, so I'm going to close it again and let it sit for 2 minutes and then when I open it, it will be ready.

OK it's been about 2 minutes, and we're going to actually fluff up the rice very gently so we're just going to fluff it up just so that it's nice and fluffy and doesn't get squished.
