How To Make Spinach Soup

  • 4 onions, chopped
  • 500 g potatoes, diced
  • 2 cloves garlic
  • 2 sticks celery
  • 2 bay leaves
  • thyme
  • 1 ltr vegetable stock
  • 500 g baby spinach
  • 100 ml soya cream
  • salt
  • pepper
  • nutmeg


Add some water to a hot pan and steam fry the onions, potatoes, garlic, celery and herbs. Add salt and pepper, put the lid on and cook for around 5 minutes. Add the stock, put the lid back on and bring to the boil. Reduce the heat and simmer until the potatoes have softened.

Remove the bay leaves and thyme stalks. Turn the heat up and add the spinach. Season with salt and some freshly grated nutmeg. Add the soya cream and some black pepper. Force the lid down and leave the spinach to wilt for around a minute.

When the spinach has wilted, transfer into an electric mixer and blend. Pour back into the pan and warm through. Add more stock if you think the soup is too thick. Check for seasoning and serve.
