How To Make Spring Onion Pancake With Salmon

Step 1: Mix eggs
- 2 eggs
- 250 milk
- 40 g butter, melted and cooled
- 120 g flour
- 2 ½ tsp baking powder
- ½ tsp salt
- 50 g spring onions, sliced
- 1 bunch of baby spinach
- 16 slices of marinated salmon
- 1 piece of cucumber
- 1 tbsp mayonnaise
- 1 bowl
- 1 whisk
- 1 sieve
- 1 frying pan
- 1 ladle
- 1 serving plate
Step 2: Make batter
Sift the flour, baking powder and salt into a separate bowl. Make a well in the centre, gradually add egg mixture and beat until smooth. Allow to rest for 2 hours.
Step 3: Cook pancakes
Heat the frying pan and ladle 3 tablespoons of batter into the pan. Sprinkle 1 tablespoon of spring onions over the pancake. Cook for about 2 minutes until bubbles appear on the surface of the pancake.
Turn the pancake over and cook on the other side. Transfer to a plate.
Step 4: Peel cucumber
With a potato peeler, slice long ways along the cucumber until you have a few ribbons or strips.
Step 5: Serve
Place a pancake on each plate, top with a handful of baby spinach, 4 slices of salmon and a pile of cucumber ribbons. Finish with a spoon full of mayonnaise.
