How To Make Squid Ink Pasta

Ingredients

  • 100 g 00 flour
  • 1 egg
  • salt
  • 3 squid ink sachets
  • 4 squids, prepared
  • light olive oil
  • semolina flour
  • pepper
  • parsley, chopped
  • butter

Method

Whisk together 1 egg and add 3 sachets of squid ink.

Put 100 g of 00 flour in a bowl with a pinch of salt, make a well in the centre, and pour in the egg and ink mix with a fork, then knead the pasta on a floured board for 10 minutes. Wrap it in cling film and rest for 20 minutes.

Break the dough into two pieces, flour it, and feed it through a pasta machine set to its widest setting. Keep feeding it through and folding it until you get down to the thinnest setting. Cut the pasta with tagliatellle attachment, then lay it out to rest sprinkled with a little semolina.

Cut 4 prepared squids in half and lightly score the inside, then lightly flour the squid pieces and fry in olive oil until lightly brown.

Cook the pasta for a couple of minutes, then drain.

Mix the pasta with a little butter; then serve with the fried squid, a drizzle of olive oil, black pepper and chopped parsley.
