Step 1: You will need

  • 1 kg mussels, cleaned
  • 1 tbsp olive oil
  • 1 tsp crushed garlic
  • 300 ml white wine
  • 2 medium tomatoes, diced
  • 1 medium handful flat leaf parsley, roughly chopped
  • 1 medium lemon, cut into wedges, to garnish
  • 1 large saucepan with lid
  • 1 slotted spoon

Step 2: Prepare the mussels

Check the mussels and discard any that are cracked or broken, then tap the open mussels and if they close; they are fine to use. If, when tapped, they don't close, then discard.

Step 3: Cook the mussels

Put the saucepan on a high heat and add the olive oil. When the oil is hot, add the garlic and sauté for 10 seconds. Add the mussels and stir well. Cook for 1 minute.

Now add the white wine, tomatoes and parsley. Stir together, then put the lid on and cook for 2 to 3 minutes.

Step 4: Garnish and serve

Once the mussels are cooked, remove any that have not opened and place them in a bowl. Spoon on some of the juice and garnish with the lemon wedges. Serve.

    Absolutely wonderful, so clear and detailed instructions. Might I suggest adding a little anise ie Pernod or Ricard as it works wonders to the overall flavour/
