How To Make Stuffed Artichoke

In this simple guide, the passionate chef Franck Pontais shows you how to make stuffed artichokes with minced pork and lemon, seasoned with parsley, pepper and parmesan. You can't go wrong with it as a starter or main course!

Ingredients

  • 1 tbsp flour
  • 3 artichokes
  • 2 lemons
  • 250 g minced pork
  • 1 small handful flat leaf parsley
  • 1/2 onion
  • 1 clove garlic
  • salt
  • pepper
  • 1 egg
  • 25 - 30 g parmesan

Step 1: Artichokes

Add your flour with some water into a mixing bowl. Now add the juice of one lemon. Mix this, and then add to a saucepan almost full of boiling water, and stir a little. Slice a lemon and place one slice of lemon on each artichoke. Now using a piece of string, tie up each artichoke, so that the lemon will stay attached to each artichoke. Place these artichokes into the boiling yet steadily simmering water, and place the lid onto the saucepan. Leave the artichokes to cook for about 15 minutes.

Step 2: Combine Ingredients

Take your minced pork, and place into a mixing bowl. Finely chop your parsley, and dice your half onion. Now add these ingredients to the mixing bowl. Crush and slice your garlic, and then add this to the mixing bowl. Crack your egg into the bowl, and grate your parmesan cheese into the bowl, before finally adding a pinch of salt, and half a pinch of pepper. Now mix with your hand. When formed, place the mixture onto a plate.

Step 3: Prepare Artichokes

Let these artichokes chill in the fridge for about 10 - 15 minutes. When they have cooled, take each artichoke and squeeze them slightly to extract the water from them. Now slice them up so you gain access to the center part of each artichoke. Use a spoon and scoop out the fluff from the center. Stuff each artichoke with the meat mix you made earlier, and then grate some parmesan on the top of each artichoke. Place into the oven for about

Drizzle a little olive oil and sprinkle some black pepper on top of each artichoke, and serve onto serving plates.
