- 3 single cream
- 20 cherry tomatoes
- 100 g soft goats cheese
- 1 caramelised onion or onion marmalade
- 2 fresh basil, chopped
- 50 g pine nuts, toasted
Mix together the cheese, the pine nuts, basil, caramelised onion, cream, salt and pepper.
Cut the tops off the cherry tomatoes, reserving the tops for decoration. Cut either side of the membrane in the tomato, then scoop out the middle with a teaspoon.
Shave off the bottom of each tomato, making sure you don't go through the flesh. This will act as a base, allowing the tomato to stand up.
Take about half a teaspoon of the mixture and put it into the hollowed out tomatoes. Decorate with a little basil leaf and the top of the tomato.
