Step 1: You will need

  • 6 scallion crêpes
  • 6 paprika crêpes
  • 6 dill crêpes
  • 6 curry crêpes
  • 6 slices of salmon
  • 2 tbsp cream, whipped
  • quarter tsp wasabi paste, (available in any Asian supermarket)
  • 2 tbsp crème fraiche
  • 6 asparagus spears, cooked
  • 1 tbsp caviar
  • 2 tbsp sweated onion
  • 1 tbsp raisins
  • 2 tbsp cream
  • 6 mint leaves, torn
  • 2 tbsp spinach, cooked and squeezed
  • 1 tbsp lime pickle
  • 1 tbsp cream
  • salt
  • pepper
  • 2 small saucepans
  • 4 spoons

Step 2: Mix the wasabi paste and the cream.

Add the wasabi paste to the bowl of cream and mix well.

Step 3: Make the salmon crêpes.

Firstly, you should season the slices of salmon with salt and pepper. You should place a seasoned slice of salmon horizontally onto a chive crêpe and heap wasabi cream onto it. Repeat this process for all 6 crêpes.

Step 4: Make the dill crêpes.

Lay out a dill crêpe and place an asparagus spear over the top. Spoon over some crème fraiche and some caviar and fold the crêpe together. Repeat this process for all 6 crêpes.

Step 5: Make the onion mix.

You should now place a saucepan over a medium heat and add the sweated onions, the raisins, the cream and the salt and pepper. Be sure to stir well and allow to sweat for approximately 2 minutes. Remove from the heat and put aside for later.

Step 6: Make the paprika crêpes.

Into the onion mix add the torn mint leaves. Onto a paprika crêpe spoon a generous portion of the onion mix and fold the crêpe together. Repeat this process for all 6 crêpes.

Step 7: Make the spinach and lime pickle mix.

Place another saucepan over a medium heat and add the spinach, the lime pickle, the cream and the salt and pepper. Stir thoroughly to combine all of the ingredients and remove from the heat. Set aside for later.

Step 8: Make the spinach and curry crêpes.

Onto a turmeric and curry flavoured crêpe spoon a generous portion of the spinach and lime pickle mix. Fold the crêpe and repeat this process for all 6 crêpes.

Step 9: Serve.

Present these delicious crêpes on large serving dishes and serve them to your guests as innovative canapés at a cocktail party.
