How To Make Stuffed Endives

Step 2: Separate the endive leaves
Chop the end off one of the endives and begin to peel away the separate leaves. After removing a few, you will find that they don't come off easily, so keep chopping the end to make them come off alone.
Repeat the same thing with the other endive. Select the nicest and largest leaves ready to make the canapés.
Step 3: Make the shrimp endives
Place the shrimps in a bowl and add the honey and some lime juice. Season with a good sprinkling of salt and pepper, then use the spoon to mix the ingredients together.
Now take four of the endive leaves and put a segment of orange in each, then place a shrimp on top of each one and finally garnish each with a coriander leaf and set aside while you make the other canapés.
Step 4: Make the goat cheese and walnut endives
Select four endive leaves and put a slice of peach into each one. Then top each with a half slice of goat cheese and a toasted walnut.
Drizzle over some maple syrup and finally, season with a little black pepper and then set aside.
Step 5: Make the beef carpaccio endives
Take four more endive leaves and generously fill them with slices of beef carpaccio. Using a spoon, drizzle over some olive oil, then season with salt and pepper.
Now, add a few capers to each and last but not least, top with a shaving of parmesan.
Step 6: Serve
Serve straight away as a refreshing appetizer at any party or barbecue.
