Step 1: You will need…

  • 6 tomatoes
  • 2 tbsp black olives, pitted and chopped
  • 2 tbsp green olives, pitted and chopped
  • 1 tbsp parsley, chopped
  • ¼ lemon, finely chopped
  • 2 tbsp feta cheese, diced
  • 1 tbsp olive oil
  • 2 tbsp walnuts, chopped
  • 2 tbsp goat cheese, crumbled
  • 1 tsp thyme, chopped
  • 1 tbsp olive oil
  • salt
  • pepper
  • 6 to 8 shrimps, cooked, peeled and chopped
  • 1 tbsp parsley, chopped
  • 2 tbsp cooked sweet corn
  • 1 tbsp mayonnaise
  • ½ tbsp lemon or lime juice
  • a pinch of cayenne
  • 1 small, sharp knife
  • 1 melon bowler
  • 1 chopping board
  • 3 spoons
  • 3 bowls
  • 3 teaspoons

Step 2: Prepare the ingredients

Get all your ingredients ready to cook.

Step 3: Chop both ends off the tomatoes

Using a very sharp knife, cut the top off the tomato and then remove a thin slice from bottom. Complete all six tomatoes in the same way.

Step 4: Scoop out the centre of the tomatoes

Take the melon baller and scoop out the centre of each tomato into a bowl.

Don't press them too firmly while doing to avoid bruising the tomatoes.

When you finish all six, drain any remaining juice into the same bowl.

Step 5: Make the olive salad

Into a bowl put the green olives, black olives, feta cheese, chopped lemon, olive oil and parsley. Then, mix all the ingredients together well.

It's a good idea to taste the salad here. Some olives are less salty than others and may need extra seasoning.

Step 6: Make the walnut and goat cheese salad

Put the crumbled goat cheese, walnuts, thyme and olive oil into a bowl and season with salt and pepper. Combine the ingredients together thoroughly.

Step 7: Make the shrimp salad

Put the shrimps, sweetcorn, parsley, lemon juice, mayonnaise and a pinch of cayenne into bowl and season with a little salt. Mix together well.

Step 8: Stuff the tomatoes

Spoon the olive salad into two of the tomatoes, making sure that it fills them completely.

Then, stuff the next two with the walnut and goat cheese salad, again paying attention to really filling the tomatoes.

And finally fill the final two with shrimp salad.

    The shrimp Salad is nice & tastes wounderful if u add Thousand island dressing instead of Mayonnase & let it be 2 tbsp instead of one. For the olive salad: if u love medium salt so u might need to sparkle some salt inside the tomato before stuffing it. It looks great on the table & it doesn't take time in preparation.
