Step 1: Make the sauce

  • 1 tbsp groundnut oil
  • 3 garlic cloves, chopped
  • 3cm ginger root, finely chopped
  • 4 spring onions, sliced diagonally
  • 150 g water chesnuts, fresh or tinned, sliced
  • 250 g prawns, raw, shelled, with heads on
  • ½ red pepper, sliced
  • ½ green pepper, sliced
  • 150 ml chicken stock
  • 2 tbsp dry sherry
  • 3 tbsp light soy sauce
  • 2 tbsp dark soy sauce
  • 1 tbsp tomato paste
  • 3 tsp white rice vinegar
  • 1 tsp sugar
  • 1 tbsp corn flour
  • 2 tsp water
  • 1 wok
  • 1 wooden spoon
  • 1 spoon
  • 1 small bowl
  • 1 teaspoon

Step 2: Heat the wok and pour in the oil

Heat the wok over a high temperature and add the groundnut oil.

Step 3: Add the spices

When the oil begins to smoke, add the following ingredients: the chopped garlic, the chopped ginger, the water chestnuts, and the spring onions. Stir-fry for two minutes.

Step 4: Add the prawns

Next, throw in the prawns and stir-fry for a further minute.

Step 5: Add the sliced peppers

Introduce the red and green peppers and continue stir-frying for another minute.

Step 6: Stir in the sauce

Add the stock and leave it to simmer for three minutes.

Step 7: Blend the cornflour with water and add to the sauce

While the sauce simmers, blend the cornflour with the water and then drizzle it into the boiling sauce. Stir for two minutes more until sauce thickens.

Step 8: Serve

Serve the dish at once. It can be served as an appetizer or accompanied by rice.

    Sorry guys but this isn't how you will get the right flavour. Hes using way too much chicken stock, and I would not add the dark soy sauce, he also missed out the pineapple which would give it the sweetness it needs.

    Those prawns are going to be well overcooked.

    try adding pineapple juice. 1/2 chicken stock and 1/2 pineapple juice and up your sugar (brown if you have it) to 1 Tbsp.

    I made this a couple of days ago - it certainly looked like sweet and sour but didnt taste like it. I tried to make it a tad sweeter by adding a tsp of honey but that didnt seem to make any difference either. :-(
