How To Make Sweet Lassi

Step 1: You will need
- 1 green cardamom pod
- 100 ml natural unsweetened yoghurt
- 1 ½ tsp caster or demerara sugar
- 1 tsp rose water
- 200 ml cold water
- 4 mint leaves
- 1 blender
- 2 tall glasses
- 1 sharp knife
Step 2: Cardamom
Use the back of a spoon to gently crush a green cardamom pod, until it splits. Remove the seeds with your fingers, and throw away the outer case.
Step 3: Blend
Put the cardamom seeds into a mixing bowl or jug, along with 100ml of unsweetened natural yoghurt, 1 1/2 teaspoons of caster or demerara sugar, 1 teaspoon of rose water and 200ml of cold water. Use a hand blender to blend the mixture into a smooth paste.Pour into glasses. Garnish with a few mint leaves.

Very True TomEas. I too, just retured from jaipur and indulged in many Sweet Lassi, from LassiWalla with crusty sour curd on top...my gosh, there is nothing like it. I am attempting a version here with raw full fat cows milk with curd.. Will post results soon
I just returned from Jaipur, India where they are renowned to have the best lassi in the world. It's true! This recipe isn't even close to theirs!! To make a true lassi you must include whole miik, preferably Buffalo milk, and milk curd. The curd is floated on top and gives a great texture. It is the key to true lassi. This lassi shown here is nothing more than a yogurt drink.

addition of mango pulp and deletion of mint and rosewater makes it taste better
the way i make lassi is just sugar, yogurt and loads of ice. The only way i dilute is by using the water from the ice.
i guess its aimed at the western market, whereas us traditional types would not have so much water in it! Lassi is supposed to be nice and thick and really refreshing but when the west thinks milkshake, they think of their local fast food chain. We think of lassi ;)
this is the first reciep i tried from videojug. the measurements are wrong. i'd rather drink a glass of milk with a spoon full of yoghurt. now i know to read the reviews b4 trying anything. :)
That was water with whatever.. never seen lassi in such a diluted form!!!! lassi is yogurt, a little water and sugar blend nicely.. no more no less.. and its tat nice creamy texture that gives lassi its rich taste..
yuk mint with milk? its just out of sugar, curd, ice and a bit of milk...if u want mango flavour u add a bit of it...thats how they make it usually in the restaurants...
SWEET LASSI, not regular lassi... thats the difference
