Step 1: You will need:

  • 200 g tagliatelle pasta
  • 25 g butter
  • 1 shallot, chopped
  • 170 ml cream
  • 50 g parmesan
  • 2 tbsp parsley, chopped
  • some truffle oil
  • salt and pepper
  • 2 saucepans
  • 1 colander
  • 1 wooden spoon
  • tongs

Step 2: Prepare the pasta

Bring a large saucepan with water to a boil. Now season it with salt. Introduce the pasta and cook according to package instructions.

TIP: If using fresh pasta, make the sauce ahead of time since it only takes a minute of two to cook. Make sure not to overcook it!

Step 3: Prepare the sauce

While the pasta is cooking, make the sauce. In a saucepan, melt the butter and add the shallots, the cream, and season with salt and pepper. Let it come to a boil and cook for a few minutes more while stirring occasionally. Now remove it from the heat. Next, add 1/2 of the parmesan, whisk it in, and set it aside.

Step 4: Finish the tagliatelle

Next, drain the tagliatelle and return it to the saucepan. Add the sauce to the pasta, add the parsley and mix well.

Step 5: Garnish and serve

Now place the tagliatelle on a serving plate, drizzle a little truffle oil on top, garnish it with a little more parmesan, and it is ready to serve and enjoy! Serve it with some crusty bread.

    Use hopla light vegetable white sauce and no worry about waistline... it is yummy good... we mediterranean people eat such food regularly! Better than any junk food you can buy these days....

    Looks easy and delicious but only as a treat now and then if your watching your waistline! For variation I would add beacon and fish.
