Tandoori chicken is an Indian delicacy that everyone would love to eat. Here is a simple way to make it at the comfort of your own kitchen.
I am going to show you how to cook tandoori chicken. I have got baby poussin here. If you cannot get hold of a baby poussin, just use a whole chicken, you can roast a whole chicken, you can get thighs, you can get breast, anything really, wings, any, it does not have to be a whole chicken, but I am doing a whole as it is lovely.
What is done is marinated with some tandoori masala which is a very, very important ingredient, easily available again, everywhere, and I have got little bit of ginger and garlic and make sure you rub it really, really well and also, I have got a little bit of red chilli, a little bit, not too much, then important again is the yogurt. Yogurt really, really helps to kind of bind it together and above all, I have used very little paprika which gives you a nice colour and rub it really nicely, but wash your hands properly because you have got red chillies on your fingers and above all, you need a little bit of lemon juice and you need to marinate this overnight. That is what is going to give you a nice flavour and to lessen the fat that it has got no skin on it.
It is very easy to take the skin off, very, very easy. Use scissors, cut it through with the scissors, and it is very, very easy. If you go to the butchers, tell them, they will take the skin off for you or if you are buying from the supermarket, it is easy to do it.
Get a knife, make sure you kind of punch holes in that, not too much, but where the bones are, both sides and the breasts especially, and cut on the side so all the flavours go in there, just put a foil and put in the fridge overnight which is very, very important. I have got this one sitting overnight in the fridge which we marinated last night. We are going to put that in a baking tray under the grill, 40-50 minutes, not on a very high temperature, 180 degrees and that's it, done.
This juice is very important, serve it with salad, just onion rings and lemon juice on the top, really, really nice. It goes very well as a starter or a main course. This is how you make tandoori chicken. .
