Step 1: Blanch the spinach
- 500 g washed spinach
- 1 large bowl iced water
- 3 tbsp butter
- 1 tbsp cream
- 1 tbsp lime pickle
- salt
- 1 saucepan
- 1 large pot
- 1 colander
- 1 spoon
- 1 slotted spoon
Step 2: Squeeze out the excess liquid
When the spinach is cold, strain it and use your hands to squeeze out all the liquid.
Step 3: Complete the spinach
Return the cooked spinach to the pan. Add the butter and the cream. Season with salt. Beat together with a metal spoon until the spinach is a creamy consistency, and at the last minute add the lime pickle.
