How To Make Teriyaki Sauce

Ingredients
- 3 tbsp Dark Soy Sauce
- 3 tbsp Mirin
- 3 tbsp Sake
- 1 1/2 tbsp Brown Sugar
- 2 Leeks
- 500 g Chicken
- 2-3 tbsp Katakuriko (Potato Starch)
- Shichimi (seven spices)
Step 1: Make Teriyaki Sauce
Mix together the soy sauce, mirin, sake and brown sugar in a jug.
Step 2: Cook Other Ingredients
Cut the leaks into about 2 cm length pieces. Cut the chicken into bitesize pieces. Heat some vegetable oil in a frying pan and add the leeks. Spinkle the katakuriko over the chicken and coat each piece. Once the leeks are browned, remove them from the pan and add the chicken to the pan, fat-side down. To remove some fat, tilt the pan and soak up with a folded paper towel. Brown both sides of the chicken and return the leeks to the pan.
Step 3: Combine Ingredients
Pour the teriyaki sauce into the pan and simmer over a high heat. When the mixture appears nicely glazed and a little drier but not burned, remove from the heat. You could season with some Shichimi (seven spices) before serving.
