How To Make Thai Breakfast

Thai Breakfast Recipe. Enjoy the soup and tea with a selection of fruit - follow this recipe and treat yourself to some of that Eastern promise. Appreciate our Thai Breakfast recipe.

You Will Need

  • 4 Tbsp tea leaves
  • 120 ml condensed milk
  • 8 Tbsp sugar
  • 600 ml boiling water
  • for the rice congee:
  • 1 ltr chicken stock
  • 120 g pork, minced
  • 250 g rice, cooked
  • 4 eggs
  • 2 tsp nam pla (Thai fish sauce)
  • 1 fresh red chilli , chopped
  • 4 tsp fresh ginger, finely grated
  • 4 Tbsp spring onions, cut finely
  • 4 coriander leaves, to garnish
  • 2 medium pots
  • 1 strainer
  • 1 ladle
  • 1 wooden spoon

Step 1:

Prepare the Thai tea

Place a pot on a high heat and add the tea leaves, condensed milk and sugar. Pour in the boiling water, stir and simmer for 5 minutes (Thai tea is always served very strong and very sweet). Remove from the heat.

Step 2:

Cook the pork and rice

Place a separate pot on a high heat. Add the chicken stock and bring to the boil. Add the pork and break it up with a wooden spoon. Simmer for 3 minutes. Add the rice and simmer for a further 3 minutes, stirring occasionally.

Step 3:

Finish making the rice congee and serve

Mix in the fish sauce, ginger, chilli and spring onion, stir well and simmer.

Break an egg into each of the serving dishes. Ladle in the hot soup and garnish with coriander. Leave for 3 minutes before eating to poach the eggs.

Step 4:

Serve the brewed tea

By now the tea should have brewed sufficiently, so strain and pour directly into cups.

Step 5:

Display the fruit platter

A typical Thai breakfast is almost always accompanied by a delicious selection of colourful fruits, so select those you enjoy and eat after the soup and tea for a healthy and unusual start to the day!

In Thailand for breakfast jook is eaten, noodle soups, or left overs from last nights dinner. I am writing a series with photos on Thai breakfasts on iFood.TV www.ifood.tv/blog/thai_breakfast_part_1 Having been to Thailand more than 30 times in the past 20 years traveling all over the Kingdom I have had many different Thai "Breakfasts". and coffee is common in the morning.

This is not Thai breakfast for sure – at least it is not authentic, but it is OK if the audience likes it. I think someone tried to reconstruct from the one they served in some fancy hotels in Thailand to the tourists. The minced pork should be seasoned with pepper and fish sauce and make into a small meatball. Sea food such as chunks of fish, shrimp and calamari can be substituted for pork. We usually add garlic oil, spring onion, strips of ginger, hot pepper and coriander at the end without cooking it – as condiments. Thai tea is OK but sugar is not needed after you made it with condensed milk. Anyhow, your presentation is superb.
