Step 1: You will need

  • 500 ml coconut milk
  • 500 ml chicken stock
  • 5 cm of galangal, peeled and chopped, (or ginger)
  • 4 lemongrass stalks, thinly sliced
  • 2 kafir lime leaves
  • 1 large chicken breast, cubed
  • 2 green chillies, sliced
  • 4 tbsp fish sauce
  • 1 tbsp brown sugar
  • a few sprigs of coriander
  • 1 lime, halved
  • 1 saucepan
  • 1 wooden spoon
  • 1 ladle

Step 2: Begin the stock

Put the coconut milk, stock, galangal or ginger, lemongrass and the lime leaves into the saucepan and bring to a simmer. Cook for 5 minutes.

Step 3: Finish the soup

Now add the chicken, the chillies, the fish sauce and the sugar and bring to a boil. Cook it for another 7-10 minutes.

Step 4: Garnish and serve

Finally, ladle the soup into a bowl, add a squeeze of lime and garnish with coriander. Serve.

Remember that the lemongrass and the lime leaves are not to be eaten. They are only for flavour!

    here, we use for 15 liters coco suppe;to prepar;first 4 liters water boil and put lime leaves,zinger,1 lime cutting four peices, whitechines zinger(2 peices),2 peices of blatter and boil for few minutes, than put 2 packets of coconut milk and 1 packet of sanne a milk cream later put a cup of fish sose, and cook for few minutes and it is ready to sreve.but in some place we also put ready curry before serving. so as it looks like red yellowish colour.so , i want to know how to m,ake the real coco suppe. so i can serve orginally thaildisch coco suppe. thankyou

    here we usw sanne cream in coco suppe. is it necessary for coco suppe? hoe the coco suppe taste? here our coco suooe taste salty or sweet in different restaurant.

    yep, no lime leaves... As well there is no explanation how to cut/ peel lemongrass or how to make ginger nice and soft??

    i forgot to add, that as i didnt have lime leaves, i added lime zest of two lemon and it was a good replacement. i also put thin slices of lemon to decorate and add flavour to replace the lime leaves flavour. so being innovative is important. i replaced the corriender with basil as i didnt have them at home.

    i followed the recipee, didnt have the corriender but used basil instead, which was still good. The fish sauce is very strong, so took the advice to use only two table spoon. thanks for the recipee, it was fun..

    Seems like authentic Asian people have said too much fish sauce! Is the recipe correct as is? I am so confused. I will sit in the corner until you tell me what to do.
