How To Make Thai Papaya Salad
Jirapan from Paya Thai cookery school in London shows you how to make a crisp Thai salad with green papaya.

Ingredients
- 300 g green papaya, grated
- 1/2 carrot, grated
- 1 bird eye chili
- 3 green beans, chopped
- 4 cherry tomatoes, halved
- 2 cloves garlic
- 1/2 palm sugar
- 2 fish sauce
- 2 lime juice
- 1/2 handful unsalted peanuts
Method
Use an unripe papaya, with no traces of orange of yellow colours.
Crush the garlic and chili in a wooden mortar and pestle. Add the green beans and gently pound them. Add the grated papaya and grated carrot and gently pound together. Add the palm sugar, fush sauce, lime juice, tomatoes and peanut. Stir together with a spoon and pound gently.
Serve with sticky rice and some fresh seafood or chicken.
