How To Make Tomato And Olive Salad With Ricotta

Step 1: You will need...
- 320 g ricotta cheese
- 2 tbsp olive oil
- salt and black pepper
- 1/2 tsp thyme - fresh or dried
- 1/2 tsp oregano
- 3 medium ripe tomatoes
- 12 good quality olives
- 1 bunch of basil
- 12 good quality olives
- for the dressing:
- 60 ml olive oil
- 1 tbsp balsamic vinegar
- 3 ramekin dishes
- 1 spoon
- 1 chopping board
- 1 sharp knife
Step 2: Prepare the ricotta
Distribute the ricotta and oil among 3 ramekins. Sprinkle with salt and pepper, then scatter some thyme and oregano over the top and drizzle with a little more olive oil.
Step 3: Cook the ricotta
Place the ramekins under the grill on the highest setting and grill until bubbling. Remove and leave for 5 minutes.
Step 4: Cut tomatoes
Cut each tomato vertically into about 5 slices, keeping the shape of the tomato.
Step 5: Serve
Arrange the tomatoes on a platter or individual plates then top with the basil leaves and olives. Drizzle with the remaining olive oil and sprinkle with the balsamic vinegar. Season with salt and pepper. Serve with the ricotta.
