Step 1: You will need…

  • 6 tomatoes
  • 85 g pitted, good quality, black olives
  • 6 basil leaves
  • 1 small bunch of parsley, chopped
  • 1 small garlic clove
  • 100 ml olive oil
  • 100 g feta cheese
  • 1 handful of rocket leaves
  • 2 tbsp roasted pine nuts
  • salt and pepper
  • 1 blender
  • 1 cutting board
  • 1 knife
  • 1 bowl
  • 1 spoon

Step 2: Make the tapenade

In the blender place the olives, garlic, chopped parsley, basil leaves and olive oil. Blend until well mixed.

Step 3: Prepare the tomatoes

Halve the first tomato, cut off both its ends and discard them. Slice it thinly and then repeat the process with the rest of the tomatoes.

Step 4: Assemble the salad

In the bowl, place all the tomato slices and spoon on the tapenade. Add the feta cheese, rocket leaves and pine nuts. Season generously with salt and pepper.

Mix thoroughly until all the ingredients are well coated with the tapenade.

Step 5: Serve

Decoratively place the assorted salad leaves on a serving platter and serve at room temperature.
