Step 1: You will need…

  • 500 g ripe tomatoes
  • 150 g feta cheese
  • 300 g frozen puff pastry, defrosted
  • 2 cloves of garlic
  • 3 sprigs of fresh thyme
  • 100 ml good olive oil
  • salt and pepper
  • 150 g black olives
  • 1 baking tray
  • 1 rolling pin
  • baking parchment or greaseproof paper
  • 1 chopping board
  • 1 large knife
  • 1 small knife

Step 2: Preheat the oven

Set the oven temperature to 200ºC (400ºF/ gas mark 6).

Step 3: Line the baking tray

Place the greaseproof paper onto the baking tray.

Step 4: Prepare the tomatoes

Core the tomatoes and slice them into rounds.

Step 5: Prepare the garlic

Peel and cut the garlic very finely.

Step 6: Prepare the feta cheese

Dice or crumble the feta cheese.

Strip the leaves off the herbs and chop them finely.

Step 7: Arrange the pastry

Roll out the pastry to fit the baking tray and carefully place it on the tray. Arrange the tomato slices in overlapping rows over the pastry and turn up the edges of the pastry all round to hold in the juices.

Step 8: Add the ingredients and bake

Sprinkle over the cheese, herbs, black olives, salt and pepper and then the olive oil. Do not over salt as feta cheese is very salty.

Lower the oven temperature to 175C. Put the tart in the oven and bake for around half an hour, or until the pastry is golden round the edges.

Step 9: Serve

Drizzle some extra virgin olive oil over the top and serve.
