Step 1: You will need...

  • 1 chicken breast, cut lengthways into 2 even slices
  • 6 to 8 slices of boiled ham
  • 2 slices of Swiss cheese
  • 2 tbsp olive oil
  • 2 soft white bread rolls, cut in half
  • for the spread:
  • 4 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • the juice and zest of 1 lime
  • 1 clove of garlic, minced
  • 1 tbsp parsley, chopped
  • salt and pepper
  • 1 barbecue, either charcoal or gas
  • 1 pair of tongs
  • 1 tray
  • 1 bowl
  • 1 spoon
  • 1 brush
  • 1 heavy pan

Step 2: Season the chicken

First, using the brush, coat one side of the chicken with olive oil and then season with salt and pepper. Turn both pieces over and repeat for the other side.

Step 3: Barbecue the chicken

Place the chicken on the barbecue and grill for 3 minutes. Turn the pieces over and grill for a further 3 minutes until golden brown.

Step 4: Make the spread

Into the mayonnaise put the following: the mustard, lime juice, lime zest, garlic and parsley. Mix it together well.

Step 5: Put the sandwich together

Open up one of the bread rolls, add a good spoonful of the mayonnaise mixture, and spread it over. Do both sides of the roll. Next add three to four slices of ham, one piece of chicken and two slices cheese. Close the sandwich and repeat the same process for the second one.

Step 6: Barbecue the sandwich

Put both sandwiches onto the barbecue and place the heavy pan on top to weigh them down. Grill for 2 to 3 minutes. Turn the rolls over and grill, weighed down, for a further three minutes. When nicely toasted, remove them from the barbecue.

Step 7: Serve

Serve the sandwiches with a little salad and mixed pickles on the side. Enjoy!

    I MADE THIS ON CIABATTA BREAD IN MY PANINNI PRESS. I ALSO ADDED ROAST PORK AND RARE ROAST BEEF FROM THE DELI. FANTASTIC FLAVORS, WELL DONE!
