How To Make Tumeric Marinated Chicken

These delicious turmeric and kaffir lime leaf kebabs are perfect for a light Thai supper, or as part of a barbecue. Geoff Redfearn, cookery teacher at the Angela Malik Cookery School, shows you how to make them in this step by step guide.

Ingredients

  • 1 chicken breast
  • 2 garlic cloves
  • 2 bird's eye chillies
  • 1 lime
  • 4 fish sauce
  • 1 tsp turmeric
  • kaffir lime leaves
  • oil

Method

Cut the chicken breast into bite-sized pieces and put them in a bowl. Add 2 thinly sliced garlic cloves, 2 chopped bird's eye chillies, the juice of 1 lime, 4 tbsp of fish sauce, and 1 tsp of turmeric. Mix all the ingredients together and leave to marinate for 30 minutes.

Soak wooden skewers in water for 30 minutes, then wrap a kaffir lime leaf around each piece of chicken and thread the pieces onto the skewers.

Heat some oil in a frying pan, then cook the skewers for about 10 minutes, turning every couple of minutes.

Serve with rice, or as part of a barbecue.
