Step : You will need

  • 260 g mushrooms, sliced
  • ½ medium onion, diced
  • 1 cups (250ml) chicken stock
  • 4 cups (1000ml) cream
  • 90 g Parmesan cheese
  • 450 g egg noodles
  • 400 g tuna, in oil
  • 300 g peas
  • canola oil
  • lemon juice, to taste
  • salt, to taste
  • pepper, to taste
  • 1 casserole dish

Step 1: Sauté Mushrooms And Onions

Fill the bottom of a large, hot pot with canola oil and add 4 cups (260 g) sliced mushrooms; sauté for 5 minutes. Allow the mushrooms to sit and change color. Salt and pepper to taste and stir. When the mushrooms have softened, add 1/2 diced onion and stir until soft.

Step 2: Great Mushroom Soup

Add 1 cup (240 ml) chicken stock to the sautéing mushrooms and onions. Continue by adding 4 cups (1 L) cream and 1/2 cup (90 g) Parmesan cheese to the pot. Bring to a boil then down to a simmer for 10-20 minutes.

Step 3: Time For Tuna

With the mushroom soup simmering, add 1 lb (450 g) egg noodles, cooked al dente (slightly undercooked). Next, add 12 oz (400 g) tuna, in oil. Finally, add 2 cups (300 g) peas and incorporate. Stir and incorporate all ingredients completely and bring back up to a simmer. Add a squeeze of lemon juice if desired. Pour the entire contents evenly into an oven-safe casserole dish and bake at 350F (180C/Gas Mark #4) for 15-20 minutes.

Step 4: Serve

Allow the tuna casserole to cool slightly before serving. Serve generously in a bowl and enjoy!

    I tried this one and it came out great. I substituted half of the peas with chopped celery and put it in with the peas. It cooked perfectly. At first I thought the numbers were way off. use a large pot when you mix the soup with the rest of the ingredients. The numbers were right on. It fit perfectly in my casserole dish. I served it with this site's how to make garlic bread recipe. I didn't have 3-T of parsley for the garlic bread so I substituted 1-t of pesto concentrate.

    So being on Top Chef must make you pretty jaded. It looks pretty good - I'd make it.
