Cut the tuna

Using a very sharp knife, cut the tuna into thin slices. Next, cut the slices into strips and then cut each strip into small cubes.

Cut the cucumber and hollow out a pocket

Cut the cucumber and hollow out a pocket. Now, slice each cucumber half into three or four chunks of about three to centimetres in size. Use a melon scoop and make a pocket in the soft, seedy centre of each chunk.

Make sure to scoop out only three-quarters of the cucumber and not to go all the way through the chunk. Repeat for all of the pieces.

Dry the cucumber

Taking a paper towel, fold it and use it to dry the inside of each pocket. This removes any excess water that might remain.

Cut the nori

Next, use a sharp knife and cut the nori into 2 centimetre-wide strips. Now turn the strips ninety degrees and slice them very thinly. Set the tiny strips aside for later.

Finish the tuna salad

Place the chilli sauce, soy sauce, sesame oil, chives, mayonnaise, salt and pepper in the bowl with the tuna cubes. Mix it thoroughly so that there is an even flavour throughout.

Fill the cucumber

Just before filling the cucumber, season the chunks with a little salt and pepper. Now carefully fill each cucumber pocket with a heaping amount of spicy tuna. Garnish the top with a few slices of the nori.
