Step 1: You will need

  • 250 g fresh tuna
  • 2 tbsp wasabi powder
  • 3 tbsp water
  • 4 tbsp olive oil
  • the juice of 1 lemon
  • 2 tsp honey
  • 2 shallots, finely chopped
  • 1 bunch of chives, chopped
  • 1 green apple
  • 1 bunch of celery leaves
  • salt and pepper
  • 1 chopping board
  • 1 sharp knife
  • 2 bowls
  • 1 spoon
  • 1 teaspoon

Step 2: Prepare the tuna

Cut the tuna into thin slices, then into strips and finally dice. Mince the tuna by chopping it very finely and put it in a bowl.

Step 3: Make the wasabi

Add the water to the wasabi powder and mix into a smooth paste.

Step 4: Make the tartar

Into the bowl of minced tuna add the shallots, chives, two thirds of the lemon juice, 3 tbsp of olive oil, 1 tsp of wasbai paste and season with salt. Mix together thoroughly and taste. You may want to add some more salt or wasabi paste to perfect the tartar. Finally add the chives.

Step 5: Prepare the apple

Cut and discard the first slice of the apple and cut four thin slices from one side. Chop these into sticks. Discard both ends so the peel is only on the tips of the apple sticks.

Step 6: Make the salad

Add the apple sticks to the bowl of celery leaves. Add the honey, lemon juice and the rest of the olive oil. Season with salt and pepper and mix well.

Step 7: Present the dish

Take a spoon of the tuna tartar. Use your hand and the spoon to make a ball and place it on to a plate. Press the ball down to form a patty. Use all the tartar mixture now as the lemon cooks the tuna and it won't taste good later. Place a little of the apple and celery salad on top of each patty and serve immediately.
