Step 1: You will need

  • 4 tbsp butter, melted
  • 4 tbsp all-purpose flour
  • 2 cups (500ml) turkey drippings

Step 2: Separate The Fat

Pour the leftover turkey drippings into a large bowl and allow it to sit for several minutes. The fat will slowly rise to the top. Once settled, carefully skim off as much fat as possible from the top of the bowl and place it in a smaller cup.

Step 3: Form The Roux

Add 4 tbsp melted butter and the skimmed turkey fat into a pan over medium to high heat. Slowly add 4 tbsp flour, a little bit at a time. Mix vigorously to keep the flour from clumping and burning. Keep stirring until all the flour is incorporated and the roux is nice and thick.

Step 4: Add The Flavor

While the roux is bubbling, slowly add 2 cups (500 ml) turkey drippings to the pan and mix well. You can also add chicken stock if you do not have enough turkey drippings or if you are making gravy without a turkey. Bring to a rolling boil and then simmer until it starts to thicken.

Step 5: Season And Serve

Once thick, season with salt and pepper. Pour the gravy into a serving bowl and serve hot. Enjoy!
