How To Make Udon Soup

You Will Need

  • 400 g udon noodles
  • 800 ml dashi stock
  • 4 light soy sauce
  • 4 mirin
  • 1/2 tsp salt
  • 2 slices of carrot
  • 1 tsp fresh chives
  • 1 tsp sesame seeds, toasted
  • 1 nori strips
  • 1/2 tsp shichimi

Method

Cook the udon noodles according to the instructions on the packet. You can cook frozen or half-cooked udon in the soup but dried udon needs to be pre-cooked and rinsed prior to adding to the dashi soup.

Dashi stock is available pre-made or you can make it yourself with kombu kelp and bonito flakes. To the dashi stock add the mirin, soy sauce and salt, and bring to the boil.

Add the pre-cooked noodles to the soup and it is ready to serve. Put into a large soup bowl and place the carrot, chives, sesame seeds, nori strips and shichimi on top.
