I'm going to show you how to make vanilla cookies. So, I'm going to use one of these mixers, you can use a hand beater alternatively, last resort would be a wooden spoon, so if you do have a hand mixer, that would be the next best thing to use. First of all, I'm going to put the butter into the mixer and I'm going to soften that.
The butter is already at room temperature but it is just to kind of beat it up. I'm going to add a dash of vanilla extract (1 tsp.) then again, combine that, followed by the icing sugar (100 g).
Make sure you add the next ingredients once the one before is combined to make sure it is mixed up well enough. Next, we'll add corn flour (100 g). And the last ingredient is the self-rising flour (150 g).
We are going to use two little teaspoons to measure out the vanilla cookie dough, and it works out that you need a rounded teaspoon's worth. Just use the other teaspoon spoon to scrape it off. Don't be tempted to overload the tray, give them a little bit of space.
These are going to be cooked quite slowly at a low temperature, they are going to go in at 150 degrees, quite a low temperature, and they will take around 20 minutes to cook. So when they come out of the oven, what I will do is slide them quickly off the tray and leave them on the cooling rack to firm up and there you have a nice little crumbly cookie.
