Step 1: You will need
- 300 ml milk
- 350 g caster or superfine sugar

Bring to the boil and boil for 15-20 minutes, stirring all the time.
When the mixture reaches the angel hair stage (115°C on a sugar thermometer), remove from the heat and stir in the vanilla extract. Leave to cool for 5 minutes.
Beat the mixture with a spoon for a few minutes until it starts to thicken and the gloss disappears
Pour into the prepared tin and leave to set at room temperature (do not put it in the fridge).
Once set, cut the fudge into small squares and store in a sealed container.

Ours is a yellow colour.. :S
made it this evening & agree it comes out chocolate colour, I suppose the mixture has burnt even though I followed the video exactly and stirred all the time.. I'll taste it soon..

Leave to cool for 5 minutes. Step 7: Beat the mixture with a spoon for a few minutes until it starts to thicken and the gloss disappears. hope this helps
I don't make my fudge the way she did , when i did i mucked up , use wikihow's version . I use one cup of caster sugar , one cup of butter , one cup of condensed milk . I made it just 40 mins ago and it's is quiet sweet and as condensed milk is already sweet i suggest you use half a cup of sugar (By the way i mean them white plastic cups you use at birthday party's). Add the ingredients to the sauce pan , on a medium temperature and KEEP ON STIRRING ! ALWAYS STIR THE BOTTOM OF THE PAN ! AT ALL TIMES ! I must emphasize that as if you don't it will burn . I left mine for 10 secs to change the t.v channel and was greeted with slightly burnt bits , but It still tastes good all the same. Don't stir for 20 mins exactly , stir untill it gets thick and gloopy then take it off the heat and scrape it into the greased tin . Oh yeah i had to take mine off the heat a few times , and turn the heat down every now and then to play it safe , also i turned the heat down when i added 2 caps fulls of vanilla essence , never stop stirring the fudge , until it's thick and gloopy . Be patient it will take about 20 mins , and don't put the mixture into the fridge , leave it out until it has totally cooled . good luck :)
what can i do to get to the soild bit???
this recpe is rubbish i get to the stringy part and then goes brown and burnt its rubbish
i dont make my fudge like this, as in boil for a certain time or wait till it looks 'gloopy' i always have a glass of cold water to hand and drop some of the fudge mixture in until it goes into a 'hard ball' not a splodge at the bottom of the glass! I just keep dropping mixture in until i get the right result. Once its how i need it, i let it cool down slightly then rapidly mix it till it goes crumbly/gritty looking then put it into a tray to set....yummy!! x
i tried this and it came out very very sweet...anyone know if it would affect the outcome if i added less sugar??
