How To Make Vanilla Muffins
These delicious vanilla muffins are kept soft and moist by using yoghurt instead of the usual milk, and are very easy to make! Sarah Spence, baker for Muffin Heaven, shows you how to make them in this step by step guide.

Ingredients
- 300 g plain flour
- 180 g caster sugar
- 15 g baking powder
- 100 g sunflower oil
- 2 free range eggs
- 120 g vanilla yoghurt
- 2 tsp vanilla extract
Method
Pre-heat your oven to 190 degrees Celsius.
Sift the flour, baking powder and sugar into a bowl and mix.
Add the eggs to the oil and whisk lightly, then add the vanilla extract and yoghurt and mix again.
Add the wet ingredients to the dry ingredients and gently mix until everything is well combined.
Divide the mixture between 12 muffin cases, filling each one approximately 3/4 full.
Bake for about 16 minutes until golden brown and well risen. Test whether they are ready by pressing one and seeing if it springs back.
Leave the muffins to cool for about 30 minutes before eating them.
