Ingredients
- 3 spring onions
- 55 g frozen peas
- 110 g long grain rice
- 1 egg, beaten
- sunflower oil
- 1 soy sauce
- 1/2 red pepper
- 1/2 tinned bamboo shoots
- 1 cups (250ml) bean sprouts
Method
Rinse the rice in water, changing the water 3 times to wash away the starch, then boil in a pan with the water coming up to about 1 cm above the level of the rice. Cook for 5-10 minutes until the rice is al dente, or with a little bite.
Remove the outer dry layer of the spring onion, remove the roots and chop finely. Chop half a pepper into a fine dice, first cutting it into strips, then cutting in the other direction.
Heat some oil in a wok, then add half a tin of drained bamboo shoots, the diced pepper, the peas and a handful of beansprouts and stir well. While the vegetables are cooking, beat up the egg, then pour over the vegetables. Stir everything together, then add the rice and stir again. Add soy sauce .
