Step 1: Sear the steak

  • 1 kg venison steak
  • 4 juniper berries
  • 1 tbsp oil
  • 2 bay leaves
  • 2 sprigs of thyme
  • 400 ml red wine
  • 2 tbsp flour
  • 200 g cherries, pips removed
  • 1 stick of cinnamon
  • 1 star anis
  • 2 medium cloves of garlic, chopped
  • 6 small shallots, halved.
  • 500 ml beef stock

Step 2: Shallots & Spices

At this stage add to the venison 6 small shallots which have been cut in half and continue cooking until they start to colour.
Add in a cinnamon stick, a star anis, 2 bay leaves, 2 sprigs of thyme and 2 chopped cloves of garlic. Stir everything together.

Step 4: Liquid

Pour in 400mls of red wine, and scrape the bottom of the pan to release all the tasty bits that have stuck to the bottom.
Add in 500ml Stock, bring to the boil and cook on the hob for 1 ½ -2 hours.

Step 5: Berries

When this time is up, add in 200g cherries and 4 juniper berries, then cook for a further 30mins.

Serve you venison stew with super creamy mash potatoes.

    A few more than four juniper berries would do no harm. However, not everyone likes to crunch a juniper berry, so do warn guests about their presence to allow them to pick the berries out.
