Step : You will need:

  • 200 g butter
  • 200 g caster sugar
  • 4 medium eggs
  • 200 g self-raising flour
  • ½ tsp baking powder
  • 1 tbsp milk

Step 1: Preheat oven

Heat your oven to 190C/375F/Gas 5. Grease and line two 20cm sandwich tins.

Step 2: Mixture

Cream 200g butter and 200g caster sugar together until they're light and fluffy. Add 4 beaten eggs little by little. If the mixture curdles just add a table spoon of flour and continue stirring. Sift in 200g self-raising flour and 1/2 teaspoon baking powder and gently fold in until the mixture drops off the spoon. If you need to thin it out at all, add a little milk and keep stirring.

Step 3: Bake

Divide the mixture between the two tins and level out with a spoon or spatula. Bake for 35-40 mins until the cakes are pale golden and springy to the touch.

Step 4: Cool and finish

Turn the cakes out of their tins, remove the paper and leave to cool on a wire rack. Sandwich the two halves together with jam, cream and strawberry slices. Dust the top of the cake with a little icing sugar.

    Cake was far too greasy and fell apart. i knew when i saw the recipe that it wouldnt work, but my mum needed to make a cake for work so she followed it, it turned awful and she had to start again with a different recipe. you should try concentrate on making your recipes good and useable rather than just making hundredss of videos.

    Hi there, I wonder if you might be able to confirm please; I need to make a bigger victoria sponge cake as a base for a birthday cake to feed about 15 people, can you tell me if i would just double the receipe to do this as I am unsure and really don't want to mess it up because I'm baking a cake for my partners birthday this sat?!:S Thanks in advance and I really appreciate any help!

    Hi September25 - I believe you have to use baking powder with plain flour. WIth self raising flour you do not necessarily need to use baking powder - I don't. You don't have to use an electric whisk, you can use a wooden spoon, but use a metal spoon when 'folding' in the flour. I would imagine it would depend on the quality of the flour and how much you want your cakr to raise as sifting allows air into the cake. I don't sift my flour when baking. Just a case of practice and you'll get it how you like it.

    made this last nite :D it was gr8 fluffy an nice :) i added a bit of strawberry syrup to give it sum flavor, sum cinnamon powder, orange rind an kola essence!! mmmm taste sooo gd...but i gotta double the recipe cause my pan was kinda big :D gonna make more today!!!
