Step 1: You will need

  • 2 slices of bread
  • 250 g grated cheddar cheese
  • 2 tbsp beer
  • 20 g butter
  • 1 tsp wholegrain mustard
  • some pepper
  • 1 baking tray
  • 1 knife
  • 1 saucepan
  • 1 table spoon
  • 1 wooden spoon
  • 1 teaspoon

Step 2: Toast

Lightly toast the bread. Place on a baking tray, and spread with butter.

Step 3: Melt

Add the grated cheese and 2 tablespoons of beer to a saucepan. Place the saucepan over a medium heat, and stir the cheese continuously until it has melted. Add a teaspoon of wholegrain mustard and grind in a little pepper. Keep stirring.

Step 4: Pour over

When thick and smooth, pour over each piece of toast.

Make sure you spread it right to the edges to stop the toast from burning.

Step 5: Grill

Place under the grill for a couple of minutes or until golden brown.

    This is very good. Use a good dark beer or porter or ale. It is perfect for a late snack.

    leave the beer out and use lea and perrins

    You can forget the beer and add a good splash of lea and perrins - tastes better

    Oops... I wasn't done. I'd also suggest you use slices of bread that are fairly large, I ended up having enough cheese sauce to spread over about 6 pieces. It called for cheddard cheese, which was white in the video, so I used extra old cheddard (it was the only white cheddar I could find or else I'd have used something milder, but in end it great and I'd use it again). The beer(I used Bishops Finger, it went great with the rarebit,no suprise as its a great beer)and mustard really cut the sharpness of the cheese making it quite the taste experience...not what I had expected, it was very rich and not something I think i could scarf down a tonne of all at once like garlic bread. Anyway final verdict- really really tasty!

    Well I tried it and it was great, dispite the fact that I messed up the recipe slightly...I added 1 tbsp of mustard rather than 1 tsp.
