Hi, I'm Jemma Swallow from the Tea Box in Richmond, Surrey. I'm a tea sommolier at the specialist tea house where we serve and sell around fifty loose leave teas. We also do corporate tea tastings and public tea tastings.

Today, I'm going to show you a variety of teas that we sell here at the shop. I'm now going to show you how to make a white tea. White tea is an un-oxidized tea, and this one is called white peony and also known as the Bai Mu Dan.

It's actually a Chinese white tea. I'm going to take a scoop and it's a lovely large leaf, put it in a pot like that, and then infuse it in eight degrees hot water. White tea is a very, very versatile tea, and it's very fragile, hence the eight degrees tea water.

Then we leave it for four minutes to brew. White tea is an un-oxidized tea. It's actually the purest form of tea that you can really get.

It's not, as some people think, a black tea with milk in it. So, my white tea, my Bai Mu Dan, has been brewing for about four minutes, and it's now ready to pour. It has a really light liquor, and you can brew it for quite some time; it doesn't really get bitter.

So my second cup will be stronger, but it won't be bitter. And that's how to make a white tea. .
