Step 1: You will need
- 450 g wild rice, long grained
- 1 ltr cold water
- 6 tbsp extra-virgin olive oil
- 120 g fresh parsley
- 120 g marjoram
- salt
- black pepper
- 1 colander
- 1 large, deep, non-stick cooking pot

Pour the rice into a pot and add the cold water. Bring to the boil and cook until the rice is tender. This takes about 40 minutes.

While the rice is boiling, roughly chop up the marjoram and parsley.
Step 4: Drain the rice
When the rice is cooked, drain it slowly through the colander. Then, transfer it into a bowl.
Step 5: Add all the ingredients
Add the chopped herbs and season with salt and pepper to taste. Stir in the olive oil and mix well.
Step 6: Serving suggestion
Spoon the wild rice onto the serving dish.Place the whole leaves of the herbs on the centre of the rice, making it decorative.
Serve at room temperature if it is accompanying a hot meal. Or chilled if it is on its own or with a salad.
Once cooked, this dish will keep well for up to 2 days in the fridge. Rice does not freeze, so don't try it!
